✿ Basque Cheesecake ✿

ingredients

  • • 1 cup of heavy cream
  • • 2 blocks of cream cheese (16 oz or 1 lb)
  • • 2 tbsp of flour
  • • 3 eggs
  • • 1 tspvanilla extract
  • • 1/2 cup of sugar
  • • pinch of salt

steps

  • Mix together sugar and cream cheese together
  • then add eggs, heavy cream, vanilla, salt, and flour.
  • Pour into parchment lined springform pan
  • bake at 425 F for 45 minutes
  • let cheesecake cool, then refridgerate for at least 2 hours

my personal experience baking it

  • Tastes sort of like flan or caramel custard. supposed to have a nutty taste, it does!! no nuts tho, the nutty flavor is supposed to come from the burnt/toasted top and sides of the cheesecake. I personally don't like flan/custard flavors but if you do 100 percent go for it! Also it might be because I made my own heavy cream and it possibly made it taste different! I don't use heavy cream very often so I make it on a need basis.

✿ Strawberry Chocolate Chip Banana Bread ✿

ingredients

  • • 3 bananas (330 g)
  • • 4 tbsp of melted butter (56 g)
  • • 1/4 cup greek yogurt / sour cream (60g)
  • • 1/2 cup brown sugar (100g)
  • • 1/4 cup granulated sugar (50g)
  • • 1 egg (approximately 50g)
  • • 1 tsp vanilla extract (5g)
  • • 1 and 1/4 cup of all purpose flour (150g)
  • • 1 tsp baking soda
  • • 1/2 cup chocolate chip + some more for toppings
  • • 1/3 cup of chopped strawberries + some more for toppings
  • • a pinch of salt

steps

  • mash bananas
  • add melted butter, and greek yogurt to bananas until combined
  • add in egg and vanilla
  • add brown and granulated sugar
  • fold in in flour and baking soda and salt
  • mix in chocolate chips and strawberries
  • preheat oven at 375 degrees F and bake for 40 minutes, then use foil to cover then put it back in for 10-15 min

my personal experience baking it

  • I added the extra foil covering on top because it didn't completely cook through. The original recipe left the inside raw (for me). You can test if it is cooked by putting a toothpick in and taking it out to see if there's any batter in the middle. The chocolate, banana, and strawberries really complement each other but I added a lot of chocolate chips so it ended up being a little more decadent than intended. But otherwise it was very delicious.
