✿ Basque Cheesecake ✿

ingredients

  • 1 cup of heavy cream
  • 2 blocks of cream cheese (16 oz / 1 lb)
  • 2 tbsp of flour
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 cup of sugar
  • pinch of salt

steps

  • Mix together sugar and cream cheese
  • Add eggs, heavy cream, vanilla, salt, and flour
  • Pour into parchment lined springform pan
  • Bake at 425°F for 45 minutes
  • Let cheesecake cool, then refrigerate for at least 2 hours

my experience baking it

Tastes sort of like flan or caramel custard. Supposed to have a nutty taste — it does!! No nuts though, the nutty flavor comes from the burnt/toasted top and sides. I personally don't like flan/custard flavors but if you do, 100% go for it! Also, I made my own heavy cream which possibly made it taste different.

✿ Strawberry Chocolate Chip Banana Bread ✿

ingredients

  • 3 bananas (330g)
  • 4 tbsp melted butter (56g)
  • 1/4 cup greek yogurt / sour cream (60g)
  • 1/2 cup brown sugar (100g)
  • 1/4 cup granulated sugar (50g)
  • 1 egg (approx. 50g)
  • 1 tsp vanilla extract (5g)
  • 1 and 1/4 cup all purpose flour (150g)
  • 1 tsp baking soda
  • 1/2 cup chocolate chips + more for topping
  • 1/3 cup chopped strawberries + more for topping
  • pinch of salt

steps

  • Mash bananas
  • Add melted butter and greek yogurt to bananas until combined
  • Add egg and vanilla
  • Add brown and granulated sugar
  • Fold in flour, baking soda, and salt
  • Mix in chocolate chips and strawberries
  • Preheat oven to 375°F and bake 40 min, then cover with foil and bake another 10–15 min

my experience baking it

I added the extra foil covering because it didn't completely cook through — the original recipe left the inside raw for me. Test with a toothpick! The chocolate, banana, and strawberries really complement each other but I added a lot of chocolate chips so it ended up more decadent than intended. Otherwise very delicious!
